There is still time to catch China Chilcano’s Ceviche Festival

Chef Carlos Delgado heads up the kitchen at chef José Andrés’ China Chilcano. A native of Peru, Delgado has a passion for ceviche, his homeland’s national dish, which he is demonstrating very well during China Chilcano’s 2nd annual Ceviche Festival.

Ceviche2Taking place now through Sunday, August 5, the Ceviche Festival provides dinner guests the opportunity to enjoy eight limited-time ceviches craft by Delgado and his team as well as ten ceviches already on the existing menu.

Among the special offers are a Ceviche Palteado that includes hamachi, avocado, leche de tigre, heirloom tomatoes, and smoked oil; and a Ceviche de Carretilla that includes octopus, conch, squid, fish, red onion, rocoto/aji Amarillo leche de tigre, and seaweed.
